“Carne en Vara” is a Venezuelan Ranger meat style. This cooking technique consists on exposing whole pieces of meat directly to the heat to slowly cook it until reach the perfect point. There is some smoke but not Iron contact only heat coming from wood. The heat is gradually transmitted to the meat, which is usually suspended on long wood sticks placed around and close to the wood logs.
